How do I go about establishing intellectual property to protect someone else from stealing it in Louisiana?

I worked with someone in the past about starting up a business. I created the name and the logo of the business, and now he wants to set up this business by himself, using the name and the logo as his own personal design.
How do I go about trying to legally prevent him from doing so, or at least gain royalties out of it?
I live in Slidell Louisiana, and the business is a convention.
I created the name and the mascot for the convention and now he’s trying to steal my ideas, please help.

    see a lawyer ASAP and get an injunction to prevent him from using it until you get yours legal!!!
